
Here is a yummy salad that you could make for yourself or your special mom. It is full of ingredients that reduce stress and boost energy.
Makes 2 servings so adjust the amounts to your needs.
2 cups Romaine lettuce
2 cups baby spinach
2 kiwis
1 cup blueberries
1 Persian cucumber
1/4 cup coarsely chopped pistachios
Dressing: make it easy and purchase a nice raspberry vinaigrette or Annie’s Tuscan Italian dressing
Chop the lettuce into strips
Add the baby spinach
Slice and add the cucumber
Top with sliced kiwi and the blueberries
Sprinkle on the pistachios
Eat with someone you love
Consider packing some for work this week by layering the salad and putting it in a glass mason jar to stay fresh. Pack dressing separately.
